I found these cool brown-and-serve dinner rolls that pull apart, but if you can’t find this or a similar product you can use slider buns, or just use normal sized hamburger buns.
Either way, halve the buns to make a top and bottom and broil the insides to ensure they don’t get soggy.



Make the Sloppy Joe Mix:
Make the meat mix by sautéing the onions and peppers in oil. Once they’re fragrant add the plant-based meat and cook a few more minutes. Then stir in the seasoning mix to the cooked meat. I used store bought vegan ground meat, but you can use TVP or lentils if you prefer.



Assemble and Bake:
To assemble, add the desired amount of your sloppy joe mix to each bun, add vegan cheese, drizzle herbed plant-based butter mix on top, cover, and then bake.



Serve!
Keep these warm in the oven until the perfect party moment and then tear and share until they are all gone.

Ingredients
- 8 slider buns OR brown & serve dinner rolls
- 2 tbsp olive oil
- ⅓ cup of onion, minced
- ⅓ cup of green bell pepper, minced
- 12 oz of vegan ground meat (Beyond Meat or Impossible recommended)
- 2 tsp brown sugar
- 2 tsp white vinegar
- ¾ cup ketchup
- 2 tbsp Worcestershire sauce (vegan version, of course!)
- 1 tsp onion powder
- 1 tsp garlic powder
- 5 slices or 8 oz shredded vegan cheese (Cheddar recommended)
Herbed Butter & Garnish
- 2 tbsp vegan butter
- 1 tbsp parsley, minced
- 1 tsp garlic powder
- 1 dash of Worcestershire sauce
Instructions
Prepare the buns
- Separate the top buns from the bottom and add them face up to a baking sheet.
- Broil them until lightly toasted. Remove from the oven and set aside.
- Change the oven setting from broil to bake and preheat to 350F / 175C
Make the sloppy joe mix
- Preheat a skillet, add oil, add the onion and pepper and cook until fragrant.
- Add your plant-based meat and stir. Cook until the meat is slightly browned and veggies are tender.
- In a bowl, mix together the brown sugar, vinegar, ketchup, Worcestershire sauce, onion powder and garlic powder.
- Stir until combined and stir the mixture into the skillet. Mix the meat and veggies together.
- Turn heat to medium–low and cook for 2-5 minutes or until desired thickness.
- If after 5 minutes your mixture is not as thick as you’d like, mix in flour to thicken further.
The more wet the mixture, the sloppier the joe.
Assemble, glaze with herbed butter, and bake
- Make sure the bottom buns are touching and add 1 oz of your sloppy joe mix to each of the bottom buns.
- If using shredded cheese, evenly disperse your mix on top of the sliders.
- If using sliced cheese, you can disperse and overlap the cheese across the stop. Break apart the slices as needed and use less or more cheese if you like.
- Add the top bun.
- Mix together butter, parsley, garlic powder, Worcestershire sauce and melt. I like to give it 2-3 seconds in the microwave until melted.
- Brush the bun tops with your butter mixture.
- Cover the entire tray with foil and bake for 15 minutes, or until the cheese is melted.
- Optionally garnish with fresh parsley minced by sprinkling on top, and serve.
